Damn tasty oaky witbier, light acidity and crisp citrus oak flavor all over.

On tap at Sovereign, pours a hazy blonde with a small white head. Aroma is full of mixed bugs, with lots of wild bugs, light spiciness from the juniper and oak. Flavour is spicy and buggy, with lots of spicy saison yeast, wild yeast, and light oak. Thankfully the juniper isn't too prominent; it's mostly just bugs and oak. Good stuff

On tap at Sovereign, pours a clear pale golden blonde with a small white head. Aroma is full of apple skins, apple core, and some rustic notes. Flavour is buggy and apple-focused, with lots of rustic saison yeast and loads of apple skins and core. This did not work for me at first, but with each sip, I'm warming up to it. Solid enough.

On tap at Sovereign, pours a clear dark mahogany—like a red wine, but with a small pink head. Aroma is pretty full-on, with lots of tannic red wine, red grape skins, and wild yeast. Flavour is wonderfully complex, with lots of vinous character. This is as close to red wine as beer gets. Tannic, musty, and wild. Really fantastic.

On tap at Sovereign, pours a clear pale blonde with a small white head. Aroma is on the subtle side, with white wine grape skins, rustic saison yeast, and some bugs. Flavour is buggy and vinous, with plenty of rustic saison yeast, white wine grape skins, and a little oak. Not the most aggressive for 1st use grape skins and the ABV, but it's subtle, elegant, clean and well-structured. Real nice.

On tap at Sovereign, pours a clear ruby red with a medium white head. Aroma is on the earthy side, with more subdued grape skins compared to the Petit Verdot version — there's faint background bugginess and rustic character. Flavour is more pronounced and expressive, with a real complex grape skin character, followed by wild yeast, gentle rustic notes and oak. Really love that cab franc grape character. Excellent.

On tap at Sovereign, pours a clear reddish pink with a small white head. Aroma reveals plenty of grape skins, gentle oak, and a buggy base. Flavour is very vinous, with a nice red grape skin character, red fruits, rustic saison yeast, and bugs. Really nice vinous character and good depth overall. Excellent.

On tap at Sovereign, pours a clear blonde with a medium white head. Aroma brings out plenty of bugs, rustic saison yeast, and some oak. Flavour is buggy, with some nice mixed culture coming out, a prominent rustic character, and a touch of oak. Very buggy and rustic but quite laid back and without a lot of depth. Clean and very pleasant.

Pale purplish amber and hazy. Thin bubbly head. Vinous nose, nice barrel, medium brett (B, I believe). Juicy, tart, off-dry, some tannins. Nice balance. This came together well.

Deep red-purple. Thin head. Deep vinous nose, threatening me with butyric acid though. On the palate, big happy juicy, the grapeyist of the ones I’ve sampled here. Lots of oak and tannins in the finish. Reminds me a bit of Wild Ambition’s A Suggestion of Dark Places in that it takes wine-beer hybrid and pushes how far in the wine direction you can go.
