Founded by a globetrotting archaeologist-turned-brewer, Next Stop Brew Co. brings culinary influence from all over the world right into your pint glass with the most unique, yet balanced, groundbreaking brews around. Digging in the eastern Mediterranean, Andrew Moore grew fascinated by the idea of bringing the flavors of the cuisines that he was falling in love with into the homebrewing recipes he was toying with while stateside in Colorado. With special attention paid to matching intensity of flavors and cutting, complementing, or contrasting the well-known characters of various beer malts, yeasts, and hops, Next Stop Brew Co.'s beers give the aficionado something new and unique.

Sample at GABF 10/05/2019, thanks to kathryneels for assistance with note-taking. Slightly hazy golden color with a thin white head that evaporates quickly to a wispy film. Spotty lace. Wheat, fruit and spice aroma. Light body with flavors of dark fruit, wheat, apricot and malt. The finish is wheaty with a mild spice and fruit aftertaste. Decent overall.

Pour is a hazy orange-ish with a large white head. Aroma is pretty much all lemongrass. Flavor is pretty much the same all lemongrass with some lager malt body. No base beer here this is all about the added lemongrass.

Pint at the Ute & Yeti. Pours black, with a medium, dense, tan head. The aroma is cocoa, molasses, cardamom, anise, soy, and chalk. Sweet and malty, with a lovely, mild bitterness. Medium body, with a grainy, lightly acidic, and thick palate. This is a quality stout, with excellent coffee notes (and I don't like coffee!). Nicely balanced flavor, too. Lovely!

Half pint at Brewer's Republic. Pours a clear, brass color, with a big, foamy, white head. Tons of basil, with a lovely earthy aroma of hay, honey, and pine. Sweet and sugary, with a mild bitterness. Light to medium body, with a creamy, clean palate. Excellent herbal IPA!

Taster at the brewery. Pours a dark, ruby-brown color, with a thin, fleeting head. The aroma is plum, molasses, raisins, coriander, sweet cherries, and light earth. Very sweet and boozy. Very heavy body, with a slick feel, and a warming finish. This is a fruity, yeasty, booze-bomb. Delicious, and decadent.

Taster at the brewery. Pours dark brown, with a huge, foamy, tan head. The aroma is coffee, rye, strong juniper, light prunes and cherries, and chicory. Sweet and earthy, with a mild bitterness. Medium to heavy body, with a sharp, malty mouthfeel. This is a strange, but very tasty, beer.

10 ounce at the brewery - black pour with a tan lace - the mace and rum are fairly present in the nose, along with some coffee, vanilla, smoke - slick mouthfeel - I appreciate that this is not overly sweet, and actually has a background tartness to it (cherry, red wine) - coffee is present, but not overstated, as is the rum, which is really just running far in the background - spices come slightly to the fore in the finish - lingering smoke and vanilla - probably the best beer I've had here.

10 ounce at the brewery - clear honey color - flavors of baked apples, lavender, pepper, honey - additional flavors of damp grain, plum, grape - would not identify this as a tripel - meh.

On tap at the Denver Winter Brew Fest. Pours a dark, hazy brown, with a thick, bubbly, tan head. The aroma is bananas, strong cloves, chocolate, bark, and orange peel. Sweet and yeasty, with only a touch of bitterness. Medium body, with a smooth, clean, crisp mouthfeel. Complex and delicious. Very nice.

10 ounce at the brewery - clear Amber - nose and flavor of caramelized sugars, light smoke, light roasted peaches, with moderate finishing warmth and woodiness - decent flavor, but thin and lacking depth.
