Local brewery in the Munster valley which offers mixed, wild or natural fermentation beers aged in barrels of Alsatian wines or spirits.
Launched in May 2021 by Sébastien, SPO gives pride of place to living beers aged in barrels. A real bias for this lover of natural beers with character, who has chosen to use only local barrels (Alsace): Pinot noir, Sylvaner, Alsatian spirits... Little cloudy orange beer, practically no head. Aroma: lots of red fruits, some raspberries, quite some sulphur, more raspberries, earthy, some beetroot notes. MF: ok carbon, medium body. Taste: very earthy, lots of beetroot, a bitter touch, lemony. Aftertaste: dry, earthy, lemony, some raspberries, a bit herbal, some vinegar, ok, not bad but also not great.

Little cloudy beige blond beer, small creamy white head, unstable, falls down quickly, non adhesive. Aroma: funky, sourish, a little peated, smoky touch, earthy. MF: soft carbon, medium body. Taste: pretty dry, funky, brett notes, a little bitter, very peated, acidic. Aftertaste: dry, spicy notes, herbal touch, more spicy, tannins, very smoky, peated, lemony, dry, decent and complex but not really my cup of tea.

Очень интересный сизон с феста, много персиков и нектаринов, также есть белый виноград, но все же кислота ягодно фруктовая а не виноградная. Интересно.

(Draught at Moeder Lambic Fontainas, Brussels, 19 Oct 2024) Golden colour with frothy, white head. Fruity, herbal nose with notes of liquorice, flowers and wood. Fruity, herbal taste with gentian root, liquorice, herbs, a touch of wood and a serious bitterness from the gentian root. Medium body, with a slight sweetness. Interesting, with a rich and bitter gentian character. Nice one.
