About
The main aim of Our Brewery is the fermentation project using historical techniques, quality ingredients and a natural influence from the environment in which we are based. The beers we create at Our Brewery require significant time and patience to develop and evolve. We have made some fresh beers in the range of pressurised stainless steel cylindrical-conical fermenters we have on-site, but that is simply to cover overheads.

We are incredibly interested in various methods of fermentation. We are experimenting with spontaneous fermentation, wild yeasts and ageing our beers. This is where our foeders and barrels come in. We have three foeders and over 30 barrels used to age some unique beers. This is a waiting game; it can take a few years to get results.

Draft at Northern Light. Clear amber color, small white head. Caramel aroma. Taste is malty toasted caramel. About the furthest thing from an Italian pilsner that I can think of. Tasty but off style? Or just wrong beer served by Northern Lights?

Can at The Sunflower, Belfast. Opaque dark brown color, almost black, beige head. Earthy cocoa powder aroma, earthy coffee grounds. Taste is very earthy dark cocoa and espresso grounds, good body. Tasty
