It all has started with a dream. OK, let's be honest, it's started with a glass of beer. Brewed by someone else.

Dream big. Always dream big, you know. We started small because at the beginning the only thing we had was our dream. We haven't owned any equipment, so our first brews were born at other city and other mash tun entirely. But we took one step at the time and soon our very own, very handcrafted and assembled by hand brewery arrived from Bila Tserkva. We installed it here in Kyiv at the premises of the former lumber house – “lisopylka” in Ukrainian, hence the name of the brew-pub – and continued the pursuit of our dream.

Today we have new state-of-the-art brewery and immensely proud of it. Don't think that we discarded our small but utterly loved old brewing system, because we have, yes you've guessed, BIG plans for it. And we keep on dreaming big. We just want to share this dream of better beer, sheer enjoyment of the drink, greater and more diverse beer culture, share it with you.

330mL bottle, pours a cloudy golden with a small white head. Aroma brings out a nice herbal, piney hop character, with a bready malt base. Flavour is quite musty, with a fungal, earthy hop character upfront, with some bready malt, and even a cardboardy character (not one hinting at beer age). Musty and a bit jumbled. Not a great IIPA.

330mL bottle, pours a hazy golden blonde with a small white head. Nose brings out lots of champagne yeasst, light lacto and tart citrus stone fruits. Flavour is along the same lines, with champagne yeast, sour citrus, some light wild yeast, and biscuity malt. Quite musty, and thus it throws this off for me a bit. But I appreciate the attempt.

330mL bottle, pours black with a small tan head. Nose brings out medium roast, some diacetyl and vegetal notes, and piney hops. Flavour is along the same lines, thankfully with the diacetyl much more buried, with piney hops and roasted malt in good balance. Actually a pretty good example of the style despite the aforementioned flaws. Pretty solid stuff.

330mL bottle, pours a cloudy golden with a small white head. Nose is loaded with salt and coriander upfront, with some soft wheaty notes. Flavour is along the same lines, with citrus, salt, and coriander. Lightly tart, with a spicy, coriander-like finish. Decent gose.

On tap at Varvar Bar, pours a deep dark reddish brown with a small beige head. Aroma brings out lots of peated malt, with subdued caramel and bready malt - this is all smoke and peat. Flavour is intensely peated, with heaps of smoked malt. This is just a delicious peat bomb. Fantastic.

On tap at Varvar Bar, pours a hazy pale yellow with a small white head. Aroma brings out coriander and subdued floral notes. Flavour is fairly floral, with subdued coriander and a hint of citrus. Floral and lightly spicy, with a grainy finish. Nothing special here.

On tap at Varvar Bar, pours a clear golden with a medium white head. Aroma brings out light citrus and piney hops upfront, with a crisp biscuity malt. Flavour is fresh, with citrus hops, biscuity malt, and light pine. Crisp and balanced, with a nice hoppy punchiness. Nicely done.

On tap at Varvar Bar, pours a hazy amber golden with a small white head. Aroma brings out spicy black pepper upfront, with saison yeast and a touch of citrus. Flavour is bright, with pink peppercorns upfront, combining well with the saison yeast, and accentuated by a bit of citrus. Nicely spicy, though it could use more peppercorns. Very nice.

On tap at Varvar Bar, pours an opaque bright dark reddish pink with a small beige head. Aroma brings out subdued fresh cherries upfront, with a bit of tangy, briney and saltiness. Flavour is very bright, with fresh cherries, very light sourness, and a bit of saltiness. The bartender described this to me as “very sour”, but this barely qualifies as sour to the North American market. Either way, this is very nice.

On tap at Varvar Bar, pours a deep dark amber brown with a small beige head. Aroma brings out very light coconut and some toasted malt. Flavour is along the same lines, with fairly restrained coconut upfront and dry toasted malt. Could use more coconut, but it's very pleasant.
