Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Bottle thanks to Owen! Pours haze yellow with a small white head. Aromas of citrus, mango, melons, pineapple, estery light soapy, lactic. Taste is estery, lactic, citrussy, lemony and oaky.

Bottle. Deep red with a pinkish beige head that's soon at the rim. 3+ Aroma of laundry, some antiseptic notes, cherries and their stones. Quite sour but the cherries are sweet and jammy under that sour edge. That Germolene note bothers me, but the gumnut note that's in Amber doesn't - even though it's getting towards a mite prominent at the end. After a while there is peppery oak. Nearly.

On tap at Arrogant Sour Festival 2019. Milky red, large white head. Fruity, bit citric, plums, lactic, some funk, juicy. Moderate sourness. Medium bodied.

On tap at Arrogant Sour Festival 2019. Hazy dark orange to amber, small off-white head. Some caramel, fruit, berries, funk, bit vinous, wood, some sweetness with moderate sourness. Medium bodied. Nice.

Light Hazy inky purple color. Very nice Pinot noir wine character, excellent oak character, with dry musty yeastiness. Nice firm carbonation, excellent grape character. Hits all the right notes at all the right points.

Thanks TimE for sharing! Taster showing deep dark raspberry with sparse latte colored foam. The nose shows deep but very light notes of brett. The palate is well carbonated and light bodied. Moderately tart with a balanced vinous background and mildly tannic with a juicy red wine forward. Very balanced and comes very well together.

Taster tulip showing grapefruit pink with translucent rims and sparse white foam. The nose shows moderately intense notes of brett and juicy raspberries. The palate is moderately carbonated and light bodied. Moderately tart with balanced notes of brett and juicy raspberries throughout but peaking at the mid-palate. Very balanced and juicy.

Light pink color with nice raspberries and bandaid nose. Fairly dry and light. The body is a touch off balance, but nice tartness. Fruit character doesn’t have great depth but not bad. Dry finish, modestly tart. Nice
