Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

375ml bottle - Pours a cloudy peachy orange colour with a small white head. The aroma is tart plums, grape skins, leather and light funk. A light sweet and moderately tart fruity taste, tart plum, yoghurt, oak and vinous notes with a light dry and tart finish.

Cloudy orange blond beer, small to no head. Aroma: very funky, bit yeasty, sourish, herbal, fruity. MF: ok carbon, medium body. Taste: nice acidic start, grapefruit notes, citrus, little bitter. Aftertaste: funky, fruity, bitter, rather soapy, floral, meh.

A riff on Coopers Red, then. An intriguing and underestimated beer. Will it be straight to the pool room or suffer in ya jocks? Bottle, slow creeper. Clear golden amber with a white head that fades to a cm or so. Aroma of bread, old lemons, weeds. Moderately tart & not completely dry with a fairly bitter finish. Unlike Too Easy (or at least the version I had) the hops have not overwhelmed the mixed culture and the balance of elements is what makes this. After a while there's a little singed toffee note under the citrus and weeds. Bonnie. A second glass is (too) murky and less good. How's that for authentic?

37,5cl Bottle. Thanks to Sir Alex. Split during Denmark-Scotland. Pours hazy dark golden with a small head. Funk and wood. Plum, grapes and brett. Quite tart and dry finish. Nice.
