Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Bottle. Pours a clear gold with a white head that dissipates quickly to the edges. Aroma has tart light fruits with Sauvignon Blanc and a bit of funk supporting. Flavor has a nice funk with tart light fruits and dry white wine underlying.

Nice cloudy pour with a fine layer on top. Nice intensity in the aroma. Balanced acidity and sourness. Dry ending. Lovely tropical flavor .Also fruity, citric and flowery. Lovely beer. [Taster from Werkmeister]

Flaska från trade. Mellanmörk röd, lätt oklar med rosavit krona. Rejält disig bottensats. Doft och smak av körsbär, hallon, jordgubb med snäll syrlighet, fat och laktosyra. Kanske lite väl lätt, saknar lite tryck.

0,75l bottle at home courtesy of Ferry, big thanks. I guess bottled 27/2/2018. light yellow rather hazy color, small white head. smells earthy, dusty, citric, lactic, musty, cheesy, barnyard. nice smell. medium body, soft carbonation, slick mouthfeel. tastes earthy, citric, spices, peppery, bit lactic, some funk, some wood, cheesy. finishes dry and lightly sour with notes of funk, citrus and cheesy notes. very nice one, very good to drink, good complexity. very enjoyable.
