Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Tap at Wildflower Brewery, Marrickville. Hazy golden colour, white foam head leaving lacing and funky yeasty aroma. Taste is pale malt, citrus rind, zesty fruity with a little biscuit and funky yeasty notes. Light bodied, soft carbonation, dry clean finish. Nicely drinkable.

Bottle shared at Chris and Ruth shindig 04/08/2018. A attractive yellow straw coloured pour with a fine white head. Aroma is nice floral pineapple, floral, saison, pineapple. Flavour is composed of light brett, pineapple, wheat, nice lemon tart, mellow sour. Palate is tart, pithy, highish carbonation.

Bottle split at the pre GBBF Shindig '18, thanks to the Wingman, 04/08/14. Lightly hazed golden yellow with a decent off white cap. Nose is lIght florfloral tones, pissy straw, elderflower, light funk, green berry must. Taste comprises damp hay, lemon rind, herbal notes, elderflower cordial, sharp citric peel, light acidic quiver. Medium bodied, fine carbonation, semi drying close. Decent enough sour for the ABV.

[ As Wildflower Gold ].
ABV: 5.0%. Cloudy - hazy medium yellow colour with a small to average, fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, pale malt, wheat, light to moderate hoppy, flowers, lemon zest - stone fruit, moderate yeasty, fruity yeast, saison yeast, pepper, light funk. Flavor is moderate sweet and bitter with a average to long duration, saison yeast, flowers, dusty, pepper, lemon zest - stone fruit, light funky. Body is medium, texture is oily to watery, carbonation is soft. [20180804]

Bottle thanks to Wingmane. It pours cray hazy bright yellow - gold with a small white head. The aroma is musty, funky, floral, oily, lactic, yellow plum, granny smith apple and wet hay. The taste is firmly dry, tart, lactic, granny smith apple, elderflower, gooseberry, white grape skin, touch of acidity, sherbet, grapefruit and drying wood through the finish. Medium body and fine carbonation. Bright, tart and with nice funky grapefruit.. Good balance. Very nice stuff.

Bottle. Clear gold with a fading white head. Floral aroma with oranges, grainy crackers and spices. Light bodied - a little kefir-like touch just about prevents it from being watery. Dry and a little sour with oranges and lemons, crackers, and a bitter floral and spicy finish. Tasty and rustic but lacks the finesse of the others I've tried from them.

Bottle. Hazy straw with a large white head that lasts all the way. Vibrant aroma with oranges, citrus flowers, green mango, light dough. Creamy texture, moderate carbonation. A little bready sweetness, moderate kefir-like sourness, citrusy bitterness. Lots of fruit, restrained funk. A gumnutty mentholish note that seems to be part of Wildflower's house culture. Positively brash compared to their Amber and Gold -- but cohesive.
