750mL undated bottle (I believe they listed the date at the brewery, but I don't remember what it was. Probably 2024), drunk 10/26/25.
Clear, brilliant, well-carbonated bronze-golden.
Really tasteful on the ginger. It comes out lightly on the end, allowing fruity Brett, also not overattenuated/expressed, mild oak and soft, juicy, yellow-like apple character.
Ginger is a light component of the flavor, which is mostly yellow apples carrying soft juiciness, mild tannin and vanilla, with round, gentle oak and fruity Brett. Just enough tartness, with an excellent dryness on the finish. Tightly carbonated, crisp, drinkable, refreshing.

Bright, cherry-rosé. Clear.
Soft Brett and easygoing oak with a pinch of cherry acidity and fleshy apple. Good acidity but not overdone as some rosés can be.
Soft, with chewy tannin, good acidity and a mellow finish. Bits of cherry melding with bright malic acid. Gentle oak and mild, low Brett. Excellent body while retaining a refreshing drinkability.

Clear, lighter golden. Brief bubbles.
Bright acidity with fleshy apple and minimal Brett. They seem to get a rustic, excellent fermentation and yet it's not all Brett and wild fermentation character. I'm assuming it's neither spontaneously or barrel-fermented, then. But still a good dryness with soft funk and big mineral. Not raucously oaky, but rather a light vanilla and evenness of aroma and flavor.
Juicy, with good structure and a pleasant body. Rustic, but again, not chalk full of Brett. Well-aged with rounded acidity. Fruity with maybe a hint of grape though I wouldn't guess it blind.

Clear, bright, brilliant gold.
Rich and juicy with a bit of residual sugar adding a round, almost vanilla character. Clean yeast letting the fruit do the work, yielding plentiful apple aromatics of all sorts. Low barrel character.
Clean and juicy with a chewy tannin but low oak overall. Rich apple pie with some residual spice and sugar character. Incredibly flavorful and balanced with good complexity and a mellowness from barrel aging.

Clear, bright brass-bronze with a hint of chill haze.
Bit of pepper and spice from both yeast and hop in the nose, yet fleshy, rich, well-attenuated apple character joining it immediately. Really interesting and always getting new things every time I smell it, as it warms and breathes over the course of a full pour.
Juicy apple, spicy phenols from the saison and lots of flesh and tannin from the apple. Great body, great attenuation. Not really a brett or malo-lactic-driven character, but more clean, with lots of Sacch. from the saison. Interesting and balanced. Very complex.

Clear bright brass-golden. Small, white head.
Bright acidity with plentiful apple flesh, mild oak and mild-to-moderate Brett. Juicy, rich, some vanilla character and good tannin structure.
Juicy and also lightly tart with drying oak and fruity Brett lingering. Excellent body via tannin. Fleshy and still preserving fresh apples flavors without going overboard on the barrel aging or malo-lactic character.

3 Penny draught, 1/18/24. Clear brass. Small, white ring of head Could smell this thing as they were pouring it...so much Brett, hell yeah. Lots of juicy apple, as well. Mushy, mac-like but compelling. Not sour or overly Bretty. The Brett seems to have burnt off after pouring. Not much barrel character. Clean, no alcohol. Dry and full of Brett and...toffee??? Something chewy, lightly sweet and sticky. So lovely. Juicy, with lots of pulp, skin, yeast...really quite fantastic amount of apple character with only a slight oak tannin. Mostly rounded, well-developed cider as a result of barreling. Delicate, chewy, complex. Impressive.
