By brewing with the very best of local ingredients and alternative techniques that span between historic styles and modern brewing technology, our approach to mixed fermentation and barrel ageing puts the emphasis on balance of flavour and drinkability. Minimal intervention is the key to ensuring that there’s a little bit of nature in every sip.

Hazy yellow pour with a stable white head. Aromas are of lemon, meringue indeed, milk/cream. Taste is tart lemon, sugar, egg yolks for the meringue. Nice tart finish. Grows on you.

Golden orange topped with an off white cap that thins to a swirl.
Nose is orange zest, hint of yuzu, grass, papaya, ripe melon.
Taste comprises mandarin, grass, soft malts, orange zest, citric tinged straw.
Medium bodied, fine carbonation, semi drying close splashed with light juicy hop bitterness.
Tidy enough pale.

Spotty tan head on a dark brown coloured body.
Pastry, meaty & malt aroma.
Medium bodied, smooth thinning out to a clean back.
Chocolate, pastry, vanilla, lactose & berry tastes with a Bailey's finish.
A bit thin for the ABV but good stuff.

Lighter shade of black topped with a khaki cap that slips to a swirl.
Nose is chocolate, caramel, dark malts, hint of coffee.
Taste comprises chocolate pastry elements, toasted brown sugars, dark malts, vanilla.
Medium bodied with bite, fine carbonation, semi drying close.
Okay stuff but not getting anything much in the way of Irish cream and overall lacks a bit of depth for the ABV.

Murky orange to light amber topped with an off white cap that thins to the edge.
Nose is light fruit tang, banana, toffee, herb.
Taste comprises soured banoffee pie, tangy fruit, lactic pinch, damp straw.
Medium bodied, fine carbonation, semi drying close with a light puckering edge.
Fun enough sour.

Nose does what it says on the tin, white chocolate, strawberries, berry pips, damp straw.
Taste comprises much the same, light lactic tang, bitter sweet berries.
Medium bodied, fine carbonation, semi drying close with a light puckering edge.
Fun sour that does exactly what it says on the tin.

Keg, third of a pint in The Boot on 17th December 2025. Pink hue to the hazed orange body, off white roof. Smells of custard, taste is a vanilla and custard mixture with a fruity (plums) undertone. Different and interesting, but is it really a beer?
