Bottle pour. Dry and funky nose. Much more sake influence than their semi-sweet. Actually seems to be a sake with apple added. Very dry and strong flavor. A bit too much. Sake spiciness, koji-like funk, dry and tannic apples. They suggested to cut it with soda water and that did make it more enjoyable. It's an interesting idea but I think they went too far, especially considering how nice the Semi-sweet cidre was.

Bottle pour. Hazy pale gold, effervescent. Rich, ripe apple nose, juicy, slightly bruised. Bit of sake yeast funkiness. Flavor is slightly over-ripe soft apple, light spice. Rich and sweet, slightly funky, fresh apple notes as well. Super original attempt to make a Japanese-style cider that works.

Glass at Jam. Nose is rather earthy rice and some alcohol present. Creamy flavor, rice, humongous vanilla, more than I ever sensed in a sake. Creamy and rich. Quite interesting and enjoyable.
