Description

Bottle from the cidery, reddish cloudy gold, almost no head. Lightly funky nose, Brett-like? Some fruitiness, lots of apple skin/seed kind of tannic notes. Carb is mild but feels like more due to the pretty high acidity. It's interesting, a bit rough around the edges, ages well at 8 years with a still identifiable and strong apple flavor. That's wild yeast for you!

Light yellow color. Evident aroma of millefiori flower honey. Semi-dry Mead, with lean body, flower honey flavor, not enough sweetness, and in the final a bit too much alcohol presence. It’s not my kind, alcohol and flower honey are the only traits; dryish and without complexity.

Very pale yellow color. The aroma is delicate, with some perfumy and soapy honey. It has an average body strength, and it’s actually a semi-sweet cider, with notes of saffron; lean, fresh, with a very light citrusy touch in the end. Not powerful, but elegant.
