Founded in 1902 in Katsuyama City, Fukui Prefecture, where the most dinosaur fossils have been excavated in Japan, the company inherited the "Ippongi" sake name from the Katsuyama Ogasawara clan.

Drank cold. The appearance of the liquid is clear, colorless and transparent. The olfactory intensity is high, and the olfactory persistence is appreciable. The taste on the nose - dominant aroma is of malted Koji rice. The taste on the nose - secondary aromas traces white peach, melon, white flowers, fresh fruit, pear, banana, vanilla, dried apricot, spring water and umami. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is rather dry. The body is structured. The taste intensity is high, and the taste persistence is good. On the palate the body is strong. The taste is pleasant. The final mouth sensations are of drinkable sake. On the palate arrive impressions of vanilla, white peach, fruit, dried apricot, pepper, peach, aromatic herbs, mushroom, dried fruit and umami, for a strong taste. VARIATIONS Plus, drunk at room temperature (My vote 7.2/10) The taste on the nose - secondary aromas leans towards vanilla and dried apricot. The first impression of intensity in the mouth is of robust and solid sake. The body is full. The taste is high and the persistence is good. The taste is pleasant. The final mouthfeel sensations are ready to drink. The taste is given tones of peach, green apple, honey, resin, spices, white pepper and umami.

The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas find white peach and melon. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is slightly dry. The body is full. The taste intensity is high, and the taste persistence is good. The taste is very pleasant. The final mouth sensations are of drinkable sake. The roof of the mouth recognizes impressions of vanilla, dried apricot, green apple, mimosa, umami and white mushrooms.

300 ml bottle. Citrus fruit, apples, booze, rather simple nose. Clear and a bit oily. Boozy, light fruit, rubbing alcohol. Some orange and apple, but not much going on. Not bad, but not special.

180ml bottle. Tokyo Deli, Elsternwick. 13C. Pale yellow, still. Vivid aroma of underripe nectarines, grapes too long on the vine, fat honeyed figs, glace orange peel. Rich and sweet, almost puddingy before first fruit, then a little astringency and a fair whack of alcohol (no heat though) gather the flavours together and close them down. Lovely.

Got in a sake mood and grabbed this bottle, seasonal sake seems like something I want to be a part of. Nose is of cherry, melon, and rice, tastes reallylovely of cherry, honey dew, honey, apples, pears. Slight zip on finish but overall creamy and delicious.

Bottle at home, now that I’ve completed my little 5 of every non beer style I can drink sake for pleasure alone, treated myself to this lovely brew. Fairly clear pour with huge bouquet of tropical fruits amd fresh flowers. Tastes of deep honey dew, lavender, other florals, touch of vanilla. Creamy namesake mouthfeel incredibly smooth. Very nice.

I’ve seen this bottle for ages but finally grabbed one. Pours orange with sweet nose of plums. First taste is sweet plums and pear maybe hint of balsamic. Then the pepper hits and for me pretty heavily. First small glass was tough but seemed to mellow considerably. The peppery heat lingers on tongue while sweetness stays on lips. Kinda fun but notbsure I’d want more.
