A production brewery located in Chicago, we believe in pushing the envelope - looking for what's next. Our canvas is your glass. You can expect interesting new flavor/style/technique mash-ups from us. But never just to be gimmicky. If there's not a clear reason to believe an adjunct or change in SOP will add something to the style we're brewing, we won't do it. But if there is…well, who knows what can happen. 12oz bottle. The galanga/l definitely takes it in a really odd direction. The hops tones are covered up by what tastes like a sweetened galanga blend...not really gingery or bitter, more sweet and earthy. Something in the aroma is odd. Not really an enjoyable beer. A lot going on, with very little finesse.

12oz bottle. Steady white head on top of a murky tan-copper body which features some floaties. A pretty respectable IPA, certainly in the West Coast style, but not really nailing it. The malts are a little heavy for the style, sweet. The hops are there, but a little too big and resinous, the Centennial takes center stage. OK....oh I thought it was 8.3%. Really drinks big for the moderate ABV.

12oz bottle. Unique interpretation/variation of the style. Not really capturing anything modern, sort of a cheap antiquated feel. Kind of shabby, unimpressive brewing. Not off, just mediocre.

Notes from July 2016: As I poured the beer into my glass, I got a mix of hop in my nose, vaguely spicy and citrusy, but not quite distinct. The beer in the glass is a hazy brown with gold edges, the haze coming from some sediment in the bottle that I just poured right on in. The head\ is sudsy, but remains stiff for a few minutes, and helps offer some of the galangal smell. You know how, with some ginger ales, it seems you’re just drinking plain old sugar water, but then a jolt of ginger spice brings you out of that notion. That’s how I’d describe the nose. Even after the head subsides, there’s still a good nose of crystallized ginger chews. I can question whether, when you are using an unusual ingredient in your beer, you should also throw in a boatload of hops. The galangal is there, suggesting not only ginger, but cinnamon sticks, lemon, and flowers. It seems a lot stronger than in other beers with ginger, but is that also the work of those extra hops. They also worked in some darker roast malts and a bit of wheat to add more complexity.

Draft at Beercade. Clear orange with s small head and some streaky lacing. Spice, ginger, herbal hops, and some lemon. Decent.

Purchased at Bottles and Cans in Chicago, IL; enjoyed at home while watching football. Appearance is a reddish Amber with a moderate white head. Aroma is like a hoppy ginger beer. Taste is really heavy on the special spice, at first I wasn't a fan but it's kind of growing on me, isn't too bad.
