Description
Our mission has been to produce vibrant, quality and innovative beer with a truly authentic team of humans since 2015. Structures Brewing was founded by James Alexander after spending years working at breweries in Washington, Pennsylvania, and Vermont.
In 2021, forces were joined when Bryan Cardwell partnered with James. Bryan comes from a background of world class brewing experience in Washington and Oregon. Together they have meshed their skills of brewing great hoppy beer and lager beer... while also loving to explore the realms of curiosity in Imperial Stouts, Barleywines and Smoothie Sours.

750ml (thx, Tom B. for picking it up and keeping it during the 3 ways of COVID!) @ Sales Force. Appearance: almost black with a weak beige head. Aroma: vanilla, chocolate, cinnamon, kind of chocolate. Taste: in exact accordance with the description with quite noticeable cinnamon and boozy notes. Overall: pretty good, but I am not as excited as some people got.

750mL bottle, pours black with a small tan head. Aroma is loaded with vanilla beans, moderate cinnamon, dark fruits, and bourbon barrels. Flavour is quite boozy, with lots of dark dried fruits, waffle cones, light cinnamon, some caramel, and bourbon. I don't get the vanilla or hazelnuts. Interestingly, the flavours I taste don't correspond all that quickly with the actual ingredients. It's boozy and rather harsh. Not my favourite flavour profile, but it's balanced reasonably well. Not working amazingly well for me, but it's solid.

Tasting at Ryan's, bottle
Pitch black colour, no head, tiny coconut fat floaties. Aroma of dark chocolate, cacao, roasted coconut. Rich dark chocolate flavour, dark sugars, cacao, roasted coconut, it tastes like a good coconut chocolate bar.
Brilliant.

Pitch black colour. Aroma of dark chocolate, vanilla, ashes. Strong body, but it seems that the alcohol wins over it; roasted malt, bourbon, medium sweetness, spirit, vanilla, and some ashes in the finish.
Good, but too much spirit, not really elegant.

Black colour, it looks like an imperial stout. Aroma of spirit, dark caramel, nothing special. Full bodied, sweet, but it also has strong roasted malt / dark sugar character, and strong alcohol; some dark chocolate, tar, molasses, bourbon.
Closer to an Imperial Stout than anything Barley Wine (although some people believe in the existance of dark Barely Wines).

On tap at Structures, pours jet black with a small brown head. Nose is full of coconut upfront, followed by caramel and a hint of salt. Flavour is rich and complex, with intense and salted caramel and coconut dominating. The palate is sticky and viscous without being brutal. Lovely use of adjuncts. Excellent pastry.

On tap at Structures, pours a deep dark amber brown with a small beige head. Aroma brings out gentle dark dried fruits, toasted nuts and crusty bready malt. Flavour is quite fruity, with dark red fruits, bready malt and a hint of caramel. On the sweeter side for a dunkel but well-made. Good.

On tap at Brouwer's Cafe, pours an opaque yellow with a small white head. Aroma is chalky, with citrus hops, and lots of muddled chalk. Flavour is muddled and chalky as hell, with lots of orange rinds, chalk, and dank hops. Way too muddled and chalky. Ugh, another crappy hazy.

750ml (thx, Tom B. for a pick-up and storage!) @ Ryan's. Appearance: pours like very dark brown with no head. Aroma: very sweet, licorice, dark malts, some fruity notes. Taste: along the same lines, feels like licorice coming to the sweet soy sauce territory. Overall: feels rather like a blend of a stout and a barleywine than a barleywine.

Poured from 750mL bottle. Near black with almost no beige head. Bourbon, mild dark dried fruits, almost stout-y that more fruited (like a blended barley wine and stout), alcohol there though mild for 14%, touch of licorice and sweet soy sauce. Decent, but could be more cohesive.
