Our sake brewery was founded in 1855 by Minatoya Tosuke. We have been producing premium sake in Niigata, Japan for seven generations. We export Jozen Sake all over the world. For varieties of Jozen Sake available in the U.S. visit: http://shiratakisake.com/products/.
Shirataki Sake Brewery is based in Echigo Yuzawa Town, Niigata Prefecture, an area renowned for its heavy snowfall. In spring the snow melts to provide an abundance of clear natural mineral water a prime ingredient for sake, which consists of 85% water. The molten snow passes though a coal seam when running downhill from mountain peaks: thus a natural charcoal filtration process further accentuates the taste and quality of the water. The other main ingredient for sake is rice: the abundance of clear natural water provides irrigation for rice-paddies - creating the best quality ingredients for sake. Echigo Yuzawa is home to “Koshihikari” the most famous, high-quality rice brand in Japan.

360 ml bottle. Sweet, fruiity mnose. Rice, peach, orange. Hazy, icy, lightly effervescent. Sweet and fruity, Sprite, rice, rice pudding. Ok but very lame. This is not bad, but it is made for little girls who hate sake, when it could have been a masterpiece al la Dassai. Damn Shame.

Bottle at Craig’s. Pours clear with no head. Aromas of aniseed, liquorice. Taste is more aniseed, fennel. Boozy finish.

Bottle split at Chriso Easter Tasting ’15, 04/04/15.
Almost translucent with off white spotting.
Nose is pear drops, marzipan, booze tunes.
Taste comprises peach, white grapes, floral notes, sweet licks, honey.
Medium + bodied, fine carbonation, semi drying close with gin and wood strains.
Ok.
