Description
Our sake brewery was founded in 1855 by Minatoya Tosuke. We have been producing premium sake in Niigata, Japan for seven generations. We export Jozen Sake all over the world. For varieties of Jozen Sake available in the U.S. visit: http://shiratakisake.com/products/.
Shirataki Sake Brewery is based in Echigo Yuzawa Town, Niigata Prefecture, an area renowned for its heavy snowfall. In spring the snow melts to provide an abundance of clear natural mineral water a prime ingredient for sake, which consists of 85% water. The molten snow passes though a coal seam when running downhill from mountain peaks: thus a natural charcoal filtration process further accentuates the taste and quality of the water. The other main ingredient for sake is rice: the abundance of clear natural water provides irrigation for rice-paddies - creating the best quality ingredients for sake. Echigo Yuzawa is home to “Koshihikari” the most famous, high-quality rice brand in Japan.

180 ml can from Ponshukan. Shiro koji is all the rage among young women and chefs, using it to add umami to foods. Now it has of course made its way into sake. Not surprised it is this one. Nose of rice, koji, umami, rather straightforward junmai. Clear, slightly viscous. Very sweet, and surprisingly fruity--almost no fruit in the nose, but huge lemon, orange, pineapple, watermelon in the mouth. Mostly citrus though, and the rice is rather covered. Rather light. A little simple and childish. Too obviously fruity, really and too sweet.

Bottle. A clear one, almost colorless. Some cooked rice on the nose, rather fruity too, and with a touch of something boozy, without being boozy though. Dry, lighlty oily and warming on the palate. Some boozy flavors and also some cooked rice. Quite fruity flavor that lasts. A decent sake indeed, but a bit boozy-feeling. I like the fruityness though. 111105

[ Trade by fiulijn ]. Cristal clear water colour with virtually no head. Aroma is moderate to light heavy rice, alcohol, moderate fruity, pineapple, coconut. Flavour is moderate to light heavy sweet with a long duration, rice, fruity. Body is medium, texture is oily, carbonation is flat, finish feel is light alcoholic. [20111012]

150 ml Can. Three years past its “drink by,” though it has been refrigerated the whole time.
Slightly sweet aroma, with caramel, peach, condensed milk. Clear and slightly viscous. Slightly oxidized flavor, with melon and pear, pepper, milk, caramel. Alcohol very noticeable, with a tingle on the tongue. Rather high acidity. Clean and crisp. This is generally a rather light-flavored ginjo, and I think the extra age has probably made it more characterful. Decent stuff, though still a bit too subtle and light (=watery=mizu no gotoshi).
