Description
Our sake brewery was founded in 1855 by Minatoya Tosuke. We have been producing premium sake in Niigata, Japan for seven generations. We export Jozen Sake all over the world. For varieties of Jozen Sake available in the U.S. visit: http://shiratakisake.com/products/.
Shirataki Sake Brewery is based in Echigo Yuzawa Town, Niigata Prefecture, an area renowned for its heavy snowfall. In spring the snow melts to provide an abundance of clear natural mineral water a prime ingredient for sake, which consists of 85% water. The molten snow passes though a coal seam when running downhill from mountain peaks: thus a natural charcoal filtration process further accentuates the taste and quality of the water. The other main ingredient for sake is rice: the abundance of clear natural water provides irrigation for rice-paddies - creating the best quality ingredients for sake. Echigo Yuzawa is home to “Koshihikari” the most famous, high-quality rice brand in Japan.

300ml bottle from Fishermans Fine Wines, Sydney Fishmarket. Clear very pale yellow colour, no head and aroma of rice, citric fruits, booze. Taste is sweetish, fruity, rice, melon hint, liquorice, with alittle caramel and warm boozy notes. Oily mouthfeel, medium bodied, low carbonation, earthy boozy finish. Nicely drinkable.

14/6/2026. Bottle shared by danlo, cheers Ed! Clear pour with some short lasting bubbles. Aroma is peachy, melon, fragrant rice, flowers. Moderately sweet with some alcohol bitters. Chocolate hints. Medium body, low carbonation.

Just off white with some bubbles clinging to the edge.
Nose is herbal, light blossom, faint honey, booze.
Taste comprises shades of melon, grain, herb, booze.
Medium bodied with, fine carbonation, drying close with a spike of booze.
Not bad.

Bottle. Strange pale pinkish white colour, no head. Aroma is floral, fruity, some herbal and mild spicy tones. Flavour is fruity, floral, some rice and mild earthy tones to it. Somewhat sweet.

Bottle@SBWF2018 (served heated up to about 45 degrees). Water colour with no head. Aroma is rice, some green apples, mild minerals as well as some herbal tones. Flavour is mild fruity and green apple tones with some rice, alcohol and mild herbal and earthy tones. Tasty. Some interesting sweetness to it also.

Bottle@SBWF2018. Silvery yellow pale colour with no head. Aroma is rice, some honey melon, mild citrus and some slight herbal tones. Flavour has quite evident alcohol sweetness, some rice, mild honey melon as well as some herbal and earthy tones.

Bottle@SBWF2018. Clean watery colour with no head. Aroma is rice, some mild citrus, minerals and some citrusy tones. Flavour is rice, some fruity, citrusy, minercalic as well as some earthy and herbal tones to it. Really smooth and hides the 15 % really well.

Blue bottle from Liquor Mt. clear and icy looking pour. Somewhat faint nose of rice, mandarin orange, lemon, light ginjo-ka spice. A bit disappointing for a daigin. Sweet rice flavor, some melon and peach, apple and lemon. more ginjo-ka spice coming through. soft and silky, full bodied. Finishes medium dry and slightly earthy. Much nicer in the mouth than the nose. Not bad, but these sakes get too much hype imo.
