Our sake brewery was founded in 1855 by Minatoya Tosuke. We have been producing premium sake in Niigata, Japan for seven generations. We export Jozen Sake all over the world. For varieties of Jozen Sake available in the U.S. visit: http://shiratakisake.com/products/.
Shirataki Sake Brewery is based in Echigo Yuzawa Town, Niigata Prefecture, an area renowned for its heavy snowfall. In spring the snow melts to provide an abundance of clear natural mineral water a prime ingredient for sake, which consists of 85% water. The molten snow passes though a coal seam when running downhill from mountain peaks: thus a natural charcoal filtration process further accentuates the taste and quality of the water. The other main ingredient for sake is rice: the abundance of clear natural water provides irrigation for rice-paddies - creating the best quality ingredients for sake. Echigo Yuzawa is home to “Koshihikari” the most famous, high-quality rice brand in Japan.

Clear.
Smells soft, deep spice and heavy earthy tones. Some salinity even. No booze, no fresh rice. Lots of mineral, maybe a bit of olive.
Soft, subtle, dry, earthy, with salted olive and limestone. Good body, great dryness. No booze or sharpness whatsoever.

Bottled@HBF18 Hotelroomtasting. Pale yellow colour, no head. Aroma is fruity, floral, some rice and mild alcohol. Flavour is rice, floral, fruity and some alcohol with a mild salty touch to it as well

14/5/2022. Bottle shared by danlo, cheers Ed. Pours clear without colour with minimal bubbles. Aroma of honeydew melon, rice water, hint of chocolate. Moderate sweetness and bitterness. Light body, no carbonation. It's fine.

300ml bottle from Japan Centre. Clear, very pale yellow colour, no head and aroma of rice, fruity, melon, alcohol. Taste is rice, fruity, melon, some caramel and boozy notes. Oily mouthfeel, medium bodied, low carbonation, drying grassy boozy finish. Quite drinkable.

300ml bottle from Japan Centre. 15.5%. Clear very pale yellow colour, no head and aroma of rice, melon, fruity. Taste is mellow, rice, melon, with some warming alcohol. Oily mouthfeel, medium bodied, low carbonation, drying boozy finish. Quite drinkable.
