Description
We have been making sake seriously, earnestly, and with the desire to make better sake than last year. We have continued to make sake with the desire to make better sake than last year. Our goal is to make sake that you will never get tired of, made with nothing but the spirit of making good sake, unaffected by the times. We have pioneered the revival of "junmai-shu" (pure rice sake) by being particular about not only the variety of rice, but also about how the rice is planted. In the 1950s, sake with added brewer's alcohol, sugars, amino acids, etc. was the norm, but Tamanohikari Sake Brewery was the first in the industry to "revive" junmai sake in 1964. We remain committed to this belief to this day. We stick to traditional hand-made methods whenever possible when brewing sake.

Poured form a box at a riverside patio on Pontocho. Nose is almost zero, a bit of rice. Clear sake turns icy and cloudy when it hits the glass. Good gimmick. Clean, simple flavor. Almost tasteless. This is a gimmick that is fun for 30 seconds but is not very flavorful sake. Nothing off, though.

720 ml bottle. Fruity nose, dry and ice, pears, citrus, koji. Rather thin and light, dry, hot, fruity, peaches,orange. Crisp and dry. Decent. Good summer sake for a clean palate.

[ As Tamanohikari Bizen-Omachi (Super Premium Ginjo) Sake ].
Clear almost cristal clear water color with virtial no head. Aroma is moderate to heavy coconut, rice, light pineapple. Flavour is moderate to heavy sweet with a long duration, rice, coconut, light pineapple. Body is medium, texture is creamy - watery, carbonation is flat, finish feel is light alcoholic. [20140315]

300 ml bottle from Yamaya. Herbal, fruity, dusty ginjo nose. Melon, orange, spice. Spicy, peppery flavor, oranges and peaches, melon, a bit metallic. Very estery, somewhat tropical. Somewhat thin body. Peppery, alcohol finish. Fresh and tasty though a bit average.

Taster at Jam. Nose of caramel, rice, mizuame, vanilla. Quite acidic and funky flavor, yogurt and some natto. Not immediately accessible, though intreresting and tasty.

700 ml bottle. Clear and shiny. Fruity nose, gumball, melon. Light spice. Clean, simple. Light, thin, light fruit, light spice, alcohol. Thin and slightly watery—typical karakuchi. A bit too boozy as well. Tastes ok, but not interesting and too dry.

300 ml bottle. Aroma of caramel, butter, vanilla. Sweet flavor, with noticeable alcohol, vanilla and caramel. Thick, smooth, palate. Very refined and elegant; a very good sake.
