Description
We have been making sake seriously, earnestly, and with the desire to make better sake than last year. We have continued to make sake with the desire to make better sake than last year. Our goal is to make sake that you will never get tired of, made with nothing but the spirit of making good sake, unaffected by the times. We have pioneered the revival of "junmai-shu" (pure rice sake) by being particular about not only the variety of rice, but also about how the rice is planted. In the 1950s, sake with added brewer's alcohol, sugars, amino acids, etc. was the norm, but Tamanohikari Sake Brewery was the first in the industry to "revive" junmai sake in 1964. We remain committed to this belief to this day. We stick to traditional hand-made methods whenever possible when brewing sake.

720 ml bottle from the convenience store. Clear and colorless. Rice nose, light fruit, apple, pear, citrus, bit of light koji spice. Grainy rice flavor, not particularly dynamic but easy drinking. A respectable sake but nothing special.

Drank cold. The color degree is a hint of yellow. The olfactory intensity is normal, and the duration is sufficient. The taste on the nose - the dominant aroma is malted rice Koji. The taste on the nose - secondary aromas and vanilla, apricot, fruity aroma, white flowers floral, lychee and white-fleshed peach. The first impression of intensity in the mouth is of robust and solid sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the taste persistence is sufficient. The taste is pleasant. The final vocal sensations are ready to drink. The taste is given tones of condensed milk, melon, dried apricot, gin and steamed rice. VARIATIONS Plus, drunk at room temperature (My vote 7.2/10). The color degree is colorless and transparent. The olfactory intensity is normal and sufficiently prolonged. The nose taste - dominant aroma is of malted rice Koji. The nose taste - secondary aromas are of caramel, vanilla, strawberry, plum, honey, pear, green apple and anise. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is very dry. The body is full. The taste is high, and the persistence is good. The taste is pleasant. The final vocal sensations are ready to drink. The aroma in the mouth bears signs of peach, mushroom, popcorn, resin, anise, umami and white mushrooms. VARIATIONS Plus, drunk hot (My vote 7.6/10). The consistency of the liquid is colorless and transparent. The olfactory intensity is high. The olfactory continuity is sufficient. The nose taste - dominant aroma is of malted rice Koji. The nose taste - secondary aromas are mushroom, spring water, rose buds, white flowers, mineral, fruity aroma, umami and white mushrooms. The first impression of intensity in the mouth is of vigorous sake. The aroma on the tongue is rather dry. The body is full. The flavor intensity is normal, and the flavor persistence is sufficient. The taste is pleasant. In the mouth the aroma is that of melon, spring water, honey, umami and anise, for a strong flavor.

Taster at Aburacho. Clear and bright. Bright rice flavor, rich stone fruit. Thick, rich, mellow. Not as impressive as the fresh one, but nicely aged over the summer.

720 ml bottle. Shiny, oily appearance. Nose of rice, light caramel, apple, banana, vanilla. Light koji and mineral flavor, pears, light lemon, rice. Light body, with a dry finish. Decent enough but easy.

ABV: 16.0%. Clear crystal water colored with virtually no head. Aroma is moderate to light heavy rice, fruit. Flavor is moderate sweet with a average duration, rice, coconut, alcohol, fruity, crispy. Body is light to medium, texture is watery, carbonation is flat, finish feel is light alcoholic. [20150808]

Taster at Aburacho. Nose or apple and citrus fruit. Great fruit flavor, with a nice summery tartness to balance. Oranges and pears. Good stuff.

Nice fruity nose, orange and melon. Somewhat hazy. Sweet and fruity, melon and oranges. Nicely done. Medium to full body.
