Bottle from Ante, Newtown. Clear golden colour, no head and aroma of rice, unami. Taste is sweetish, rice, fruity, unami, woody, complex, with some warming booze. Medium bodied, low carbonation, drying warming unami boozy finish. Nicely drinkable.

Bottle pour. Spicy, milky nose, lichi, vanilla, ginger ale. Somewhat spicy flavor, creamy, Sprite and tropical fruit. Delicious.

Taster at Jam, from a bottle aged for 5 years at 0 C. in the brewery. Grainy, rice, lemon, very milky. This is creamy and brings out the yamahai flavor very nicely, but cannot touch the yamadanishiki version.

Taster at Jam, 5 year old, stored at 0 C. in the brewery. Rich and creamy, rice pudding, lemon, yogurt, vanilla. Awesome yamahai acidity and amino, with the most wonderful, miraculous silky body. This is awe-inspiring.

Cup from the 1.8 liter bottle. Gold to brown color, one of the darkest modern sakes I have seen. Nose of vanilla, rich pudding, rich and big yamahai. Great dry flavor, lactic acidic, yogurt, vanilla, rice. Lovely. Very strange to have such a dry yamahai. Nice.

Glass at Jam. 3 year old aged at the brewery in wood. Funky, acid nose, oxidized, honey. Oily, silky soft body. Full and rich, sherry-like with great acidity to balance the oxidized aged flavors. Well-done koshu.

Glass from a 1.8 liter bottle. Light yellow color, even though it is not a yamahai. Funky rice and koji nose, a bit acidic. Crisp, light, rice candy flavor, acidic with a bit of lemon.

Glass at Jam. Cloudy, oily, unfiltered. Dry nose, lightly spicy, a bit acidic. Dry, light flavor, yogurt, melon, vanilla. Wonderful dry fruitiness that verges on a yamahai but isn’t. Great stuff.
