Description
Our family-run brewery has survived against the fierce currents of time and change since 1856. Embodying this spirit, we persist in our commitment to producing exceptional sakes, created from local ingredients. Pioneered by several generations, each Akashi-Tai sake is a reflection of the Yonezawa family’s undying love for their profession. In 2005, the company began exporting sake to new markets, specializing in the local market in the U.K. It later expanded to France and the rest of Europe, and began exporting to high-end department stores in London and starred restaurants around the world. Since then, we have expanded our market to France and the rest of Europe, and have supplied many restaurants and bars, including high-end department stores in London, starred restaurants, and round-the-world cruise ships.

300ml bottle from Seven Cellars. Slightly hazy pale yellow colour, foamy white head that dissipates away and aroma of liquorice, rice, fruits, melon. Taste is sweetish, rice, fruity, melon, with some drying citric and lactic yogurty notes. Medium bodied, soft carbonation, medium-sweet finish. Quite drinkable.

6/3/2019. Bottle, sample, courtesy of Danlo, cheers Ed!. Pours thick murky creamy yellowish with no head. Not at all appealing to look at. Aroma has a huge dose of lemon, starting off with a heady mix of sweet lemon meringue pie and lemon curd, with that initial sweeter side being replaced by more bitter grated peel of lemon and lime. Taste is sour lemon, just sharp sour lemon, wow. A little alcohol warms, this is like a mix of limoncello, bitter lemon and pure lemon juice. Bitter/sour finish. Very good, thoroughly enjoyed it.

500ml bottle. Murky yellow-white colour, no head and lemon-lime yuzu citrus aroma. Taste is very sour, drying tart citrus, intense lemony, juicy, zingy, lime, citrus rind, yuzu, sweet lemon curd. Slick mouthfeel, medium bodied, low carbonation, sour finish with some sweetness and a warm alcohol note in the background. Interesting, quite drinkable.

Bottle at the hanging bat. Pours hazy yellow, nose is massive lemon peel, bit of lime, taste is zesty, sharp citrus, tart. Almost like drinking pure lemon juice.

Bottle shared on Level 42 14/06/2017. Many thanks to Scopey for this one. A clear water with a light yellow hue, no head. Aroma is hot alcohol, paint stripper, grape, rustic Moonshine. Flavour is composed of plum fruit, hot alcohol, grape, solvent, little bitty. Palate is semi sweet, spicy alcohol, no carbonation. . Hides the alcohol quite well. Fun to try but i can’t get on with sake in general.

Clear pale as yellow with a minimal head that soon thins to nyadda.
Nose is light spice, boozey, pickled ginger, grains.
Taste comprises sweet licks, candy, booze, grains, melon balls, lychee, gin tickle.
Full bodied, fine carbonation, drying close with a big boost.
Ok if a touch raw.

Drank at room temperature. The consistency of the liquid is clear. The color is amber. The structure is thick. The olfactory intensity is high, and the olfactory persistence is considerable. The taste on the nose - dominant aroma finds fruitiness and vanilla. The first impression of intensity in the mouth is of strong sake. The sweetness is very sweet. The body is structured. The gustatory intensity is high, and the gustatory persistence is good. The taste is pleasant. The finish is silky and clean and tends more towards sweetness. The aroma in the mouth brings hints of plum, ginger and chestnut. VARIATIONS Plus drunk cold (highly recommended temperature) My vote 7.4/10). The olfactory intensity is very high. The taste on the nose - dominant aroma finds fruitiness, malted rice Koji and plum. The taste on the nose - secondary aromas traces dried apricot and vanilla. The first impression of intensity in the mouth is of powerful sake. The aroma is rich. The taste is very pleasant. The final mouth sensations induce compulsive drinking as it is "excellent sake". The aroma in the mouth brings hints of vanilla, white peach, ginger and plum. Plus, drunk warm, as it is mixed with hot water (one of the recommended options according to the manufacturer's instructions) (My vote 7.0/10). The consistency of the liquid is clear. The color is golden yellow. The first impression of intensity in the mouth is of medium-strength’s sake. The body is full. The taste intensity is normal, and the taste persistence is sufficient. On the palate the aftertaste is of medium intensity. The taste is very pleasant. The final mouth sensations are of drinkable sake. The aroma in the mouth brings hints of malted Koji rice, plum and green apple.
