Glass at Setsugekka Restaurant in Niigata. Rich, fruity, estery nose, spiced and stewed peaches, pepper. Sweet and fruity flavor, rice, peach, canilla, pepper. A bit heavy. Very nice.

Glass at Setsugekka Restaurant in Niigata. Rounded, fruity nose, oranges and peaches, some vanilla. Light, airy body. Fruity flavor. A bit plain but good for a honjozo.

720 ml bottle, chilled, on New Year’s Day, 2012. This is the top of the line daigin from a small, old Niigata maker that came highly recommended as a gift from an old friend. Light, elegant nose, fruit and spices, rice. A bit too faint, but nice. Lovely flavor, honey, rice and grains, bread, or actually more like yakimochi (roasted rice cakes). Some jamlike berries as well as mizuame. Very complex yet soft and elegant. A bit of pepper and maybe cloves, even vanilla. Rich body, just enough acidity and alcohol. Burns a bit in the finish, with pepper. Wow, this is wonderful. Flavor is close to a junmai in some ways, full, rich rice. Big full body as well. Probably the best pasteurized daigin I have tried.
