Tater at Jam. Cloudier than their \"usunigori\" versions, but not as thick as some. Bright, milky nose, vanilla and peaches. the flavor is somewhat subdued compared to the regular version, dulled by the yeast. Not bad, but definitely not as bright and fruity as the straight-up Junmai.

Glass at the brewery bar. Lightly cloudy. Huge fruit nose with citrus, pear, tropical fruits. Again, huge flavor, great fruitiness, pear, orange, peaches, some vanilla. Great depth. Best of 5-6 great sakes here today. The Yamadanishiki stands out much better than the Aiyama in the other daigin.

glass at the brewery bar. Lighter, drier than the regular junmai, more ethereal. Fruity, spicy nose. Flavors of pears, apples, apricot, and a touch of coconut. A bit creamy, but more light and silky. You get a huge difference to the heavier junmai. This is clean, airy, delicate. Lovely, but not as good as the cloudy Miyamanishiki junmai.

Glass at the brewery bar. Color of lychee, cloudy whitish, not thick though. Yeasty, but not nigori. Nice creamy nose, yogurt, light funk, pineapple, rice pudding. Lovely flavor of pina coloda-pineapple and coconuts, rice, some licorice. Amazingly complex and delicious. Smooth and silky yet light. Some hot alcohol in the finish. Perfect.

Glass at Jam. Milky, quite cloudy. Big rice, cream, caramel nose. Flavor is sweet rice, vanilla ice cream, peach, melon. Light but full, lightly carbonated. Very nice, with good acidity to balance the sweetness.

Taster at Jam. Thick and juicy, great rice flavors and nose. Sweet, rich, lots of rice and some fruit. Solid body and lovely rice flavors, richer and fuller than the usual.

Bottle pour at Jam. Lightly cloudy, not really thick. More of an usunigori. Nose of citrus, rice, spices, sawdust. Great mouthfeel, with light, prickly carbonation. It is rich but not heavy. Very nice fruity flavor, just a bit milky but not overdone and very refreshing. Could drink a lot of this.

Bottle pour at Jam. Mineral and fruit nose, esters, stone fruits, spice. Light, thin, minerally. Well water flavours and fruits--grape, cherry, melon. Clean and refreshing, but thinner than the others. Surprising that the Daigin ties for the lowest score of the 6.
