Glass pour at New Karasuma. Freshly opened bottle. Sakemirai is a rice I never heard of before, so I wasn't even sure what it was. Fresh and fruity, as expected: pears, strawberries, apple, lemon, touch of melon. Full and smooth, creamy, fruity, lightly spicy. Rich and slightly savory. Another winner from them--but I have yet to drink them side by side to tell the differences.

100ml cup at Jam. Clear. Huge, bright nose: citrus, pear, tropical fruits, spices. Wonderful nose. Crisp and super flavorsome, as expected. The nama character takes this up a notch. Super fruity, crisp, icy. Delicious.

Glass at New Shinmachi. Again, Juyondai impressing the hell out of me. Huge ginjo-ka nose, spicy cedar, lemon, stone fruit and rice. Light, crisp, ethereal, lots of spicy ginjo-ka again reminiscent of cedar, peppery finish. Beautiful.

Glass at New Shinmachi. Oily looking, clear. Big fruit nose, peppery, orange, peach, tropical fruits. Pear. Sweet, spicy, peppery. Full and smooth. Great.

Glass at New Shinmachi. Namazume version. Yellowish tint, clear. Fruity, spicy aroma with enormous ginjo-ka and notes of pepper and cedar. Flavor includes tropical fruits, oranges, apricots, nicely spicy, clean, crisp. Lovely. I guess all their sakes are.

Glass at New Shinmachi. It’s always on the menu but this is the first time they have actually had in in stock. Clear but hazy, oily. Huge fruit nose, tropical, stone and citrus all, peaches, melon, mango. Sweet flavor, lovely fruits, oranges and peaches, melon and mangos. Rather sweet and full, luscious flavor. Not really suited for a hot summer night, but absolutely delicious. Hard to pack in this much fruitiness.

Glass at Jam. My first chance to try this ghost sake, bottles of which can sell for up to $1000. Brilliant fruit nose, melon, peach, lemon and lime. Huge and bright fruit flavors, unlike any sake I’ve had, citrus, stone fruit, not quite tropical, grape. Some rice and koji in the back. A brilliant flash of fruity sweetness then dries out nicely like a fine white wine, leaving a bit of alcohol. Almost worth the hype!
