300 ml bottle from the brewery. Big, spicy ginjo-ka nose, cedar, pepper, citrus, apples. Crisp and fruity. Pears, apples, light citrus. Very spicy koji and yeast. Dry finish with sharp kire. Light spice and citrus remain. Another great one from my new Nada favorite.

Glass at the tasting room, their most expensive at ¥800. Unpasteurized junmai daigin, their top of the line. Oily, icy, clear. Very floral nose, Asian pears, spicy. Silky soft body. Sweet rice flavor, vanilla, apples, pears. Silky and lovely. Super elegant.

This is a fresh daiginjo sake taken directly from the tank and only available at the brewery tasting room. Huge, fresh, fruity nose. Sweet and amazingly fresh flavor, fruity, very creamy, lightly spicy with pears, apples, and apricots. Wonderful.

Glass at the brewery, part of a 3-sake tasting set. Big, grainy, rice nose, slightly toasty. Full, creamy flavor with vanilla, okoge or toasted rice, lightly spicy. Silky smooth and lovely body. Elegant and great.
