Description
Kikuno-ji Sake Brewery aims to brew sake with a crisp, clear flavor by taking advantage of the severe cold of Morioka, the coldest city in Honshu, and its soft spring water.
The Nakatsu River, which runs directly behind the Kiku-no-Masa Brewery, is a calm, clear stream with a shimmering riverbed throughout the year. At our brewery, water from the subsoil of the Nakatsu River is pumped from a well and used as brewing water. The water, polished by the earth of Iwate, contains moderate mineral content and is soft. The brewery uses locally grown rice for more than 90% of the rice used for sake brewing, with "Yunokou," "Ginotome," and "Ginginga" as the main rice varieties suitable for sake brewing.

Drank at room temperature. The color is a hint of yellow. The olfactory intensity is normal and sufficiently prolonged. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas find hints of caramel, fruit, mushroom and cooked pear, for a delicate aroma. The first impression of intensity in the mouth is of robust, rich and full-bodied sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the taste persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. The taste is given tones of condensed milk, melon, fruit, banana, honey, popcorn, resin and umami. VARIATIONS Plus, drunk cold (My vote 6.8/10).
