Description
On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

Cask at Hops, Crewe. Pours a hazy / cloudy golden amber with a sizable frothy almost white head and good lacing. There’s floral hops in the aroma, plus hints of oranges and peaches. In the mouth it is quite bitter with a creamy texture. Flavour has floral hops with substantial amounts of resin and pine, plus orange peel. Later on there are hints of mango and underlying sweetness leading to a slightly dry finish. This is quite nice – more bitter and hoppy than I expected.

Cask at Tom’s Tap, Crewe. Pours a very dark chocolate brown with minimal off-white head. The aroma has malts and nuts with just a hint of liquorice. In the mouth it is sweet and juicy with a creamy texture. Initially there are hints of sharpness but these gradually fade. Malts, nuts and dark fruits in the flavour to start with. Later there are traces of dandelion and burdock, dried fruit and figs leading to a fruity and slightly dry finish. This is rather nice.

Excellent vanilla stout. Really good flavours of chocolate and, of course, vanilla. Smooth and just the right level of sweetness. Cracking stuff.

On tap at Tom’s Tap, Crewe. Pours a cloudy orange-brown with a small frothy off-white head. There’s smoke and stone fruits in the aroma plus a hint of salt. In the mouth it is slightly bitter with a creamy texture. Flavour is dominated by smoked malts and beechwood plus continental hops and marmalade. Bitterness lasts into the finish. This is decent.

On tap at Tom’s Tap, Crewe. Pours almost black with a small tan head and fairly high carbonation. The aroma is sweet and fruity – I can’t be more precise. In the mouth it is sweet with a creamy texture and flavour of cake, jam and berry fruits. Later on there are cherries and hints of spice and figs. Finish is somewhat fruity. This is decent – though a bit strange.
