WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. On tap at Bearded Iris. Cloudy golden with medium white head. Aroma is citrus hops, medium body, medium carbonation, and pretty good lacing. Taste is juicy citrus hops and slightly bitter finish.

On tap at HopCat Lexington. Orange with small white head. Aroma is nice citrus hops, medium body, medium carbonation, and ver little lacing. Taste is citrus hops and a little herbal hops.

Can from Craft Brewed. Pours a hazy gold with a full 2 fingers of foam that linger. Lots of orange, peach and some mango as it opens up. Bitter on the palate. A touch of grassy hop character. Citra really jumps out, good stuff.

Can thanks to Joe. Pours a cloudy orange yelllow with medium white head that lasts. The aroma is tropical fruit, melon, earth. Medium body, juicy, grapefruit, melon, grass, light bitterness, very nice.

Pours a milky, opaque yellow-gold with a moderate white head and ample lace. Lemon, grapefruit and pilsner malt on the nose. Not really digging this beer; the malts are dry and grassy, and the hops mix citric dankness with an herbal back end and a resinous finish--all of which are good IPA components--but the beer still seems too raw, with a vegetal undercurrent and a medicinal back end that take away from the more positive notes. Finishes dry but empty, ending on a seltzery hop juice fade. Texture’s watery and undercarbonated. Not BI’s best.

Can multiple times from Craft Brewed. Pours a hazy gold with a 2 fingers of soapy foam that lingers. Tons of peach, mango, lychee and pineappple. A tropical bouquet. Honey-like texture with coconut and more tropical punch. Just a smack-to-the-face of hops. Great beer, probabaly my favorite BI to date. So smooth and creamy on the finish. More Bearded Iris goodness, a potent hop bomb with a wicked berry and tropical front backed by herbal undertones and rampant floral Mosaic notes. Leans more orange-grapefruit as it warms, with a bubblegum sweetness creeping in on the back end. Toasted biscuit malts mesh with a grainy backbone, and the finish grows a slight pine vein. Could use more bitterness, but you can’t fault the depth of hop flavor developed here. Hazy gold pour with a moderate head and tons of lace. Huge dank-tropical nose. Lively feel holds the slightest alcohol warmth, but a solid IPA overall.
