Description
Picture yourself eating a handful of red raspberries, drinking a glass of fresh squeezed lemonade, or sipping on a glass of fine wine. Those sour, tart, and acidic flavors you are currently imagining are what makes sour beer taste quite different from traditional beers. These flavors, which are unique to sour beers, are the product of time and the right mix of microorganisms. While our sour beers age in oak barrels for an average of one year, a blend of microorganisms will shape the sour, tart, and acidic flavors that we’ve come to desire. Yes, sour beers take an exceptionally long time to develop, but we think that sour beers are well worth the wait.

Clear, bright gold, small white head. Light, sweet fruity aroma, kinda stone fruit, kinda floral. Moderate sourness, mild oak, somewhat acetic, mild pucker. Light feel.

The beer is pale gold, a bit cloudy, very small head. Aroma has a lot of sweet apricot, mild oak, very mild vinegar. Taste is medium sour, kinda acetic, decent fruit but kinda washed out, a little bland sourness on finish. Light feel.

Bottle - Tart, toast and cherry. Dirty dark brown with a small beige head. Tart cherry and dark malts with a long tart finish. Pretty good.

Bottle sampled at Essen Winterbeer Festival 2014. Pours hazy dark pink red with an off white head. Big floral aroma with lavender, citrus, berries and Brett funk. Flavour is light moderate acidic. Medium bodied with soft carbonation.

On tap at the brewery. Aroma has a light oak note with a hint of graininess. Light rose hip and moderate orange peel. A hint of a butterscotch. Pours a hazy, golden orange with a small white head that recedes to the edge where it lingers for a bit. Light lacing and small legs. Flavor is fairly acidic with a light graininess. Medium light oak notes with quite a bit of citrus, especially orange. Faint rose hip notes. Medium light bitterness and a touch of butterscotch in the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty nice beer but I do not get much of the rose hip character. Good acidity and orange notes, but the base beer doesn’t seem very exceptional.

On tap at the brewery. Aroma has a moderately strong lemon lime character. Moderate acidity with a light coriander phenolic note. Pours a hazy, pale yellow gold with a small white head that quickly recedes to the edges. Light lacing and small legs. Flavor is moderately acidic with quite a bit of lemon lime character. Like the aroma, there is a small phenolic character as well. Light oak notes and a touch of an odd chemical character. Mouthfeel is light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, an alright beer but the base beer seems a touch off. Lots of fruitiness and citrus. Could use a bit more carbonation. Not much oak character.

Draft. Amber beer with a cream head. Light tart aroma. Tart and light sour flavor with light apricots. Medium bodied. Tart/sour and apricots linger with light acetic notes and light malt.

Tasting at Matt’s
Cloudy amber color, small head. Funky aroma of malt, old cellar, feet, yeast, fruity, apricots, light strawberries; a bit original, overall interesting. Too much carbonation; smooth and lean mouthfeel; quite sour, but not supported by enough body. Some acetone spoils the experience.
Great aroma, not convincing flavor.

On tap at the brewery. Aroma has a lot of apricot character with hints of oak and light acidity. Much more fruit than I was expecting. Pours a hazy golden orange with a thin white head that lingers for quite a bit. Medium light lacing and faint legs. Flavor is moderately tart with hints of malt. Medium light oak tannins with moderate fruit notes. Light citrus and less fruit than in the aroma. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice apricot sour but a bit one dimensional. I like the aroma, but the flavor has less fruit and both could use more funkiness.

Bottle shared in NYC - thanks to drsandman. Pours cloudy orange-yellow with a creamy white topping. The aroma holds lots of peach, apricot, lemon. Light sweet flavor, quite tart, a little salty, with nips of tangerine, lemon acidity. Light bodied with fine, massaging carbonation. Somewhat bracingly tart on the finish with more lemon, peach, lemon squash, apricot. Very nice beer overall. Quite refreshing.
