Description
he Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference. These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence

Cask at brewery. Right after the Jung, so 2 unblended still beers. This one is noticeably darker and hazier. Very different in general. Flavor is much less sour and has more of a strawberry jam essence. A wood sweetness is apparent. A dry woody flavor. So much apparent wood and less sourness. Drying. Flat beer. Tingling sourness at the end but very well restrained. The jam character is novel and very interesting.

Cask at brewery. I think this is the second time I am trying this. Cask pour into lambic shaker, 11oz. Flat pour, low carbed. So, that part is authentico. Aroma is very orange marmalade vinegar, not very vinegary but a mild marmalade vinegar. Pretty authentic smelling, not sure I could pick this out bling as not a true lambic. A little cork, a light Brett horseblanket. A little lemon peel. Mouthfeel is flat with a little sparkle but that's expected for style. Or maybe the sourness makes me think it's lightly carbonated. Dries you out a bit. It's not bad acetic sourness, just a strong lambic with grapefruit skins. That sort of thing. I think these guys are nailing spontaneous fermentation.

Can shared in San Diego. Cheers to Sandy. Pours lightly hazy yellow-gold with a small, creamy white head. Great stuff, modest acidity, some peach, while grape, pale wood, juicy lemon. Light bodied with soft, spritzy carbonation. Quenching finish, melon, salt, decent dry funk, woody dryness, hay, tart lemon. Great stuff.
