he Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference.These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

Bottle shared at Leightons place 18/01/2018. Many thanks! To Leighton. A light hazed pale yellow gold, a halo of white head. Aroma is tangy apple, grape, musty, funk, murky funk. Flavour is composed of tangy grape, funk,. Flavour is composed of dry tart grape, funky, grapefruit skin, citrus. Palate is crisp, tart, citric acid. Super dry finish. Nice funk complexity.

Bodney Towers Bottleshare. Thanks to Leighton. Light haze on this gold beer, no head. Palate is light and finely crisp. Tangy lenon tangerine and mandarin. Little floral pine. Light tangy sherbet finish. Very drinkable. Trace of coconut.

Bottle - big thanks to LKS. It pours clear yellow - gold with a quickly dissipating white head. The aroma is earthy, musty, funk, chamomile, tangerine, orange, oak, vanilla, orange chewits and oiliness. The taste is crisp, dry, tart, lactic, orange peel, tangerine, good mouth - pucker, floral, chamomile, bright acidity, oak and sherbet with a dry finish. Medium body and fine, prickly carbonation. Good fun.

Bottle shared in Hackney - sourced from the blendery. Pours clear gold with a small, fizzy white head that fades out quickly. Great aroma, lemon, chamomile, a little funk, pale wood. Light sweet flavour with continuing background chamomile, moderate lemony tartness, woody dryness. Light to medium bodied with spritzy carbonation. Super clean finish, tart, lightly acidic, more lemon, some wheat flakes, biscuits. Outstanding, great depth, super clean.

Bottle split at Bodney Mansions, thanks to Leighton, 18/01/18. Clear light golden blonde with a decent off white covering. Nose is pissy citrics, straw, lemon, grains, yuzu, balsa wood. Taste comprises sharp citric, funk, oak, floral, herbal, chamomile tea, grass, peach. Medium bodied, fine carbonation, drying close with a mellow pucker. Solid tangy sour ... wouldn't have this as a witbier !

T42 Christmas Bottleshare. Thanks to Leighton. Hazy gold beer, good cream colour head. Palate is airy, smooth and semi dry. Decent find carbonation. A pleasant and light tangy white wine, a little lemon and a trace of wet wood. Floral grape that builds in strength. Some richer white wine towards the light finish. Shows a mild warmth. Good stuff!
