Making craft beer is a time consuming but exciting process, which requires knowledge, passion, care and creativity. Everything is based on a constant research and selection of quality raw materials, then the brewers decide which beer will be produced in terms of style, taste, colour, abv, etc. After the recipe is designed, the brewing process can start. Malt is milled and it’s mixed with water in a process called “mash”. Next step is “lautering” and then “boiling”. Afterwards wort is cooled and moved to fermentation tanks where yeast is added. After 4-6 weeks beer is ready to be kegged or bottled. Every single process is under brewers control, supported by our chemical analysis laboratory. Currently our brewery can produce more than 4000 litres per day.

Tap at Birraio dell'anno 2022, Florence, Italy. Pours hazy pale gold, opaque, with very fine white foam. Aroma is intensely fruity and tropical, citrus, even herbal. Body and carbonation are average, slightly chewy. Taste is medium bitter, with some underlying sweetness. Final is fairly dry.

Black with a creamy, beige head that lingers the duration. Aroma of roasted grains, and slightly oxidized. Taste follows suspicions—mildly bitter with an acidic, sour finish, despite noticeable coffee and roasted flavors underneath. Clearly going off. Can’t find a date anywhere on the bottle. Bought last month. A big disappointment.

On tap at Bøker & Børst. It pours a hazy orange-golden colored body under a creamy off-white head leaving lacing. The aroma is lightly vegetal, with generic fruityness, mango and some vanilla. It's full to medium bodied, smooth and nicely carbonated, with a mostly fruity flavor. Mango, some vanilla, lactose and a light bitterness. A vegetal touch too, even in the finish. Except for that, it's a very fine one indeed. 191004

Bottle at the Munich Ratebeer Christmas tasting, at Jonas's, Garching, Friday 17th December 2021. Pours dark brown with a light beige filmy head. Super smokey nose, tangy and smoke combine, some sourness. Ok.

Darkest black, big fine-foamed head. Smells super smoky and a bit malty sweet, like BBQ sauce sizzling on a hot smoker. The flavor is smooth, mid-body, nice bitterness and a rounded chocolate-malt background, with a bit of unexpected acidity. Lots of smoke for sure.

Bottle. Dark brown, big dark lacing brown foam. Peaty smoked nose , licorice and tar, medium body foamy mouthfeel. Dry, roast, smoke, peat, rust, a bit heavy and onedimensional.

Bottle. Dark brown color with beige head. Aroma is pig skin, bacon, chocolate. Taste is ham, iodine, chocolate, some red fruits. High carbonation, surprisingly tart. Different from how I expected it to be.
