Kyotolefty Profile - Brewver (Dev)

Small bottle from the Universe supermarket in Kuroishi. Pale to medium pink with a low, white head. Nose is apple, somewhat sweet, some baked apple with light spices, cinnamon, lemon. Sweet apple flavor with skin, spice, ok tartness and a bit of tannin. Overall it's well balanced and reasonably complex. Possibly the best Nikka cidre I have had to date.

Bottle from Universe supermarket in Kuroishi. Pale gold, fizzy, with lace. Dull, dry apple nose with some lemon. Lightly sweet, fresh apple, a bit tart. Crisp and fizzy. Overcarbonated. Decent enough but boring. I think it's a step above the regular Nikka Dry Cidre though.

Bottle from a crafts store in Hirosaki. Glad I found this one. Bright amber orange, hazy, with a nice, full head. Rich sweet apple in the nose, brown sugar and spice notes. Sweet and sour flavor, green apple, baked apple pie, with a tart finish and full-on, fresh flavor. Smooth and full with light carbonation. Best cider of this trip.

300 ml bottle from the station shop in Hirosaki. Golden colored, clear and effervescent. Nose is green apple, some skin, minerals. Fresh, lightly tart flavor, not as sweet as expected. Crisp and balanced. Not complext but very tasty and quaffable.

Bottle from the station shop in Hirosaki. Seems to be a collaboration with another farm or something. Medium to deep golden color with low carbonation. Nice apple nose, warm and sweet, spice. Sweet and sour flavor, a touch of vinegary sourness. spicy, almost cinnamon, rich, with sweet apple flavor and a minerally finish. Very nice sweet-sour balance.

Bottle at Saito Saketen in Aomori. Clear pale golden color, effervescent. Bright apple nose. Tangy flavor, low sweetness, citrus, some tannins. Balanced and drinkable, though a bit fizzy. Better than expected.

Bottle pour at Saito Saketen in Aomori. Clear. Nose is rice and green apple. Tangy, light sweet flavor with apple notes and citrus. Somewhat acidic and tart. Nice.
