Double barrel aged imperial stout
Brewed for Darby's Rare Brews 2025 event
“Summer Breeze” is an imperial stout barrel-aged for eight months in some special barrels. Originally a bourbon barrel, it was aged with vermouth after the bourbon was emptied. The signature of both spirits is present, with the vermouth adding a subtle botanical aspect and light vinous characteristics that are not typically found in the style. To enhance the flavour, we toasted some coconut and let it infuse in cold temperatures. We also made our own extract of cardamom and added it after the coconut infusion.

Dark brown, thin head. Nice chocolate impy and big vermouth. Light body, boozy bourbon, so definitely Boreas base, with the vermouth cutting over top.

On tap. Pours black with short white head. Aromas of roasted malts, minty chocolate, oak and aquavit. Flavors follow same with additional chicory and creamy chocolate. A nice rich chocolatey and spicy summer stout.

Poured from the tap @ Darby's. Near black with small beige head. Mild barrel character, splash of cardamom spice, gentle roasted malts, decent.

On tap at Darby's. Pours black with a beige head. Lots of burnt sugars, roasted malts, and charred wood on the nose. Flavour has decent roast, dark sugars, burnt caramel, some charred wood, and boozy (bourbon?) finish. A bit too rough on the finish, but still quite nice.

On tap at Darby’s, pours black with a small tan head. Nose is full of robust roasted malt, big charred, woody oak, maybe some spirit (although I can’t say which), and a toxic of burnt sugars. Flavour is bold, with a nice roasted malt base, then the barrels kicks in — must be some sort of spirit or liqueur that combines with the oak/bourbon character. There’s some burnt sugars that are well-attenuated. Comes together reasonably well. Solid.
