Organic Bulmers Norman Apples
This cider is a first on many levels, we have never had the opportunity to work with the Bulmers Norman apple & this is our first Keeved cider. The Bulmers Norman is a English cider apple originally found in Normandy, France in the 1890’s by the famous H.P. Bulmer & Co. (U.K.). This bittersweet apple is well known in the cider world for its floral flavors, mild sweetness & astringencies. Grown organically by our friends at Whitestone Mountain in Tonasket, WA. Keeving is an almost magical method of cider making, traditionally used by both English & French producers. This true to style keeved cider is sweeter than most of our ciders, but on the dry end of a traditional Keeve. Simply put Keeving is a process to preserve sweetness, build carbonation & clarity without pasteurization, adding sugar, chemicals or Co2. To accomplish this we remove the nutrients from the juice during fermentation through biomass reduction utilizing the pectin naturally found in apples. We hope you enjoy this unique cider experience!

Clear 750ml from Press online. Mojito glass at home while awaiting yet another thunderstorm.
Quick soda sizzle. Clear, rich honey gold pour.
Oaky, floral nose, macerated/browned bittersweet apple; slightly stuffy.
Taste is carbonic, brown/earthy, bittersweet leaning off-dry, loads of leathery tannins, moderately herbal, wax, old lettuce.
Super crispy, juicy & thin. Moderate-low acid, lingering tannins & approachable tartness.
Crispier & less perceived sweetness compared to other keeved bottled I've tried. Well done.
