PEACEMAKER is part of our experimental series, which uses a blend of two spontaneous solera fermented beers. The blend is a combination of two base beers, one 100% wheat and the other, a golden ale, made with pilsner malt. Both beers were brewed on our 4 BBL system and then cooled in our coolship, a custom-built copper 12 BBL vessel designed to cool wort overnight while inoculating with wild yeast and other microbes from the air. In November, we expanded into the space next door to add 100 oak barrels and a new coolship, which sits under an open window with fans overhead to circulate the air. This allows the boiling wort to cool for 12 hours, which inoculates the wort with airborne microbes, including brettanomyces, lactobacillus, pediococcus, and saccharomyces. Once it is cooled, the wort is transferred to stainless-steel totes where it aged and fermented for 8-12 months. This beer was created using a solera method, a process where unfermented wort is added to finished beer, which causes the active microbes in the beer to referment the new wort, creating an almost identical copy of the original spontaneously fermented beer. When the total volume has finished fermentation, a portion of the beer is then transferred to another container and the new, unfermented wort, is topped off to replace and referment on the existing beer. This is a continuous process that we have used for over three years to create one of a kind beers, as each beer changing slightly from the previous batch. The base beer is funky and tart and pairs perfectly with the sharp flavors of the barrel, while still peeking through with a complex and unique character. This beer is the culmination of years of spontaneous fermentation, barrel aging, and a unique partnership with Red Cox Cellars. Bottles are extremely limited and will be sold on a first come, first served basis. This beer will continue and develop with age so drink fresh or save for later

750ml bottle pours a clear gold. Apricot lemon juice nose. Flavor of under ripe grapes and lemons and apricots. Tart finish with some minerality. 8 3 8 4 13

355ml bottle. Thx mjs. Poured almost clear golden color. Vinegar, sourness, fruits, dry. Pretty good.

Sample from a bottle at Beer Meets Wood last weekend. Longest line of the fest. Lightly tart with plenty of earthy cherry fruity lemony flavors offset with a bit of earthy funk. New brewery for me, I'd like to try more from them.

75 cl bottle. Pours hazy yellow, small white head. Aroma is wineous, fruity. Light wooden. Sourish and slight wooden. Dry, citric and smooth fruity. Lingering sourish and fruity finish.

750mL bottle, sent from wchesser (thanks Will!), pours a cloudy golden with a small white head. Aroma brings out lots of barnyard funk, light oak, and some tropical stone fruits. Flavour is very wild, with loads of oak, stone fruits, and medium acidity. Bright, stone fruity, and perfectly acidic. Excellent.

6 3 6 3 12 Bottle at Oedpus, Carnivale Brettanomyces opening party 2017. Very hazy dull dark golden with a small off white head. Aroma of light barnyard funk, tart light fruits, lactic notes, rubber, yoghurt. Flavour is light to moderate sweet and moderate sour. Medium bodied with soft carbonation. [22/06/2017]

Bottle at Oedipus, opening party for Carnivale Brettanomyces ’17. Murky yellow golden color. White head. Aroma’s: soft sourness, wood, funk, light bourbon/vanilla. Retronasal it’s soft sour, light bourbon/vanilla, wood. Flavor is above moderate sour. Light bodied. Tart finish.

Bottle at Oedipus. Hazy light golden with white head. Light peach, funk, lots of yoghurt, soft hay and citrus peel, dough, light bready. Just medium sour and light sweet. Medium bodied. No yoghurt on the nose but lots when sipping. Decent enough.
