Rustic Wheat Ale w/ Orange Zest & Coriander

We’re super stoked to introduce you all to this new offering. Our “Witbier” is fermented in oak barrels with the Bootleg Biology Saison Parfait Strain (same as we use for Saison du Rosier) and aged for 3-4 months. It’s can-conditioned with local orange blossom honey and aged for an addition 6 weeks. No mixed culture was pitched, but it definitely has some brettanomyces funk and a small amount of acid. This beer is imminently drinkable, with a subtle citrusy flavor from the fresh orange zest that plays remarkable well with the fruitiness from the yeast. The aroma has a prominent coriander flavor coming off as slightly earthy and floral. This is not your average wheat ale. Cheers!

On tap at Ponderosa, pours a hazy blonde with a small white head. Aroma has plenty of bugs, coriander, citrus, and woody oak. Flavour has fermented out honey, coriander, citrus, and some muddled yeastiness that may be due to the interaction with the honey. Certainly more interesting than your average wit. Good but a little lacking.

16 oz. Aroma has notes of funk, orange peel, lemon, wheat, chalk, coriander. Pours hazy golden with a two finger off-white head with excellent retention. Taste is lightly to moderately sour (6/10), funky, finishing dry with funky witbier flavors. The honey really comes through in flavor as well. Impressive and creative take on the style.
