"Enlightenment Brut" is a Belgian Golden Ale brewed to capture what we love most about sparkling wines. To do this we followed the traditional méthode champenoise process used to produce French Champagne. This super hands on, borderline crazy process, is about as labor intensive and traditional as anything we can imagine. Naturally it was right up Otherlands' alley.

After an extended fermentation in the tank, Enlightenment Brut was dosed with sugar and fresh champagne yeast, bottled, capped, and allowed to re-ferment for two months. The bottles were then stored at an angle with the necks pointing down and "riddled," or turned by hand 90° every day to coax the yeast sediment towards the cap.

750mL bottle, pours a hazy golden with a small white head. Aroma has some clove, plenty of esters, some banana… not really much champagne-like effervescence. Flavour is better, with plenty of champagne-like effervescent, light clove, and a touch of banana. Unusually estery for a brut. It’s decent but doesn’t quite hit the mark.

Dullish colour. Not much head. This is a bit phenolic, definitely giving off "strong tripel" vibes. It's a bit off-dry, with phenols, banana. It's fairly sweet. It's not bad, but it's not coming together all that well for me.

Poured from 750mL bottle (bottle 95). Hazed gold with full white head. Belgian yeast, underlying esters, soft champagne yeast character in the background. Okay.
