Double Barrel-Aged Pale Sour Ale finished in a PX Sherry Cask
Bottle Release 11/9/24 - $16/500mL Bottle
After more than a year of souring in well-used wine barrels, we blended two barrels of our pale sour base into a Spanish PX Sherry cask. Another 11 months contributed vinous notes of almond, oak, apple, and leather, to the already complex lemony-funk of our house culture! Named after Alcázar de Jerez de la Frontera, a 11th century fortress in the region where Sherry has been produced for nearly as long!

50cl bottle pours a clear gold, some frothy white head. Nose has under-ripestone fall fruits, stone fruits too, some sour orange. Neutral wood. Flavors mostly follow, but the sherry hits pretty hard in the mouth. White port. Medium high acid, medium full bodied.
