Southern Hemisphere cask IPA brewed in collaboration with distributors Vertigo Beers.
We used Enigma and Topaz and the flavour profile delivers a hop bomb! Pine resin and fresh hay with a touch of redcurrant and cantaloupe from the Enigma hops. A monumental blast of tropical lychee from the dry hopped Topaz evens out into soft, quaffable bitterness.
As we used solely Australian hops, we wanted to give this beer a fitting Southern Hemisphere title. We decided on Canopus after the brightest star in the Southern sky and second brightest overall behind Sirius. Canopus can be seen with the naked eye from where Enigma and Topaz grow as the keystone of the Carina constellation.

Cask at the Southampton Arms, London on 18th July 2025. Crystal clear gold with shallow whitish foam and spot lacing. Rich, nutty malts and tangy fruits in aroma. Bitterness, maltiness and fruits in-mouth, and a good bitter, grassy finish. Full bodied with a smooth mouthfeel. Superb.
