Flor is a fine example of keeping things simple. Blended from two old Herefordshire cider barrels containing one brew made in February 2023.

The grist was composed of pale malted barley and wheat in equal proportions. One large addition of fresh unaged hops came at the beginning of the boil to give a refined and crystal-clear bitter finish, while leaving space for the flavours of fermentation to come to the fore.

The wort was filled into two old oak barrels from cider and perry maker Tom Oliver and left untouched to spontaneously ferment for two years.

The resulting beer was primed with cane sugar and left to carbonate naturally in the bottle for six months. The finished beer is polished and delicate.

Team tasting at CBJ, thanks to Dan for the bottle. Near clear pale gold beer, good pale cream colour head. Airy palate, semi dry, decent fine minerally carbonation. Soft malts, a light creamy sweetness. Soft funk. Mild tartness and very mild gueuzey dried fruit. Light and semi dry finish. For the style, pretty quaffable..

Bottle. Mills online. Very little bit gushy. Sits mostly clear pale gold. Huge swede settles nicely to a sticky slim glossy foam. Nose has huge brett. Oak. Mills bugs. Some fusty citrus. Taste has some sweetness before it gets bitter and pithy. Big mouthfeel. Foamy and bright. Bretty bitterness to finish. Simple but massively tasty and drinkable.
