Nous sommes bien heureux de vous présenter Cerf-Volant #3, un assemblage de saison de blé et d'épeautre affinées sous bois pendant 24 mois. Nous avons brassé cette bière presque entièrement à partir de grains et de houblons du Québec. Les arômes de Cerf-Volant #3 évoque le citron, la pêche et les fleurs avec une touche vineuse. En bouche, vous y trouverez des notes d'agrumes, avec une acidité rafraîchissante et des bulles fines issues d'une refermentation naturelle.

Aroma: wood, farmhouse notes, a bit of hay.
Taste: along the same lines, low to moderately acidic, nice woody character, a bit of lactic notes.
Overall: quite good, enjoyable (Ryan 🤪!).

Poured from 750mL bottle. Clear blonde gold with minimal white head. Ends up being between Cerf-Volant 1 and 2, but closer to 2 for me (2 is my favourite). Nice vinous nose with a hint of floral cat pee, soft spelt and wheat base, there's a touch of seltzer like quality on the body. Prefer the nose over the taste.

Lightly hazed with unfiltered particles, a whitish cap, average stay and a thin lacing rim left on the brew. Nice fruitiness in the smell with light peaches, apples, some funky-sour barrel action and mild Saison yeast. The taste is milder, but still has the Brettiness, sour, acidic and fruity notes. A tad vanilla from the wood barrel. Quite an easy-drinking, barrel-aged blend of Saison which offers good sour-funkiness.

A hazed golden saison with a very thin white head. In aroma, sweet fruity malt with light Brett, apricot, light Epsom salts, very nice. In mouth, a nice sweet fruity mix of tart ground cherry, light lactic notes, light apricot, Epsom salts, very nice. On tap at Hautes Plaines location.
