This farmhouse-inspired Wild Ale was brewed with malted wheat, NY grown triticale, and inoculated with native microflora. Opal Basil was steeped during the coolship rest to provide an herbal balance to the tart flavors derived by our house wild yeast culture.

750 ml waxed bottle from Tavour. Aroma is dusty basement, lemon, basil (although I don’t think I would have picked it out without reading the label), dough. Pours nearly clear golden with a one finger bone white head that falls into a ring somewhat quickly. Taste is as sour as can be (10/10) and acidic with flavors matching the aroma. Basil is noticeable but not all that prominent. Finishes a little dry. Nice.
