If we were pressed to name drop what is in our opinion the most underrated and underappreciated hop variety in our day to day brewing here at Polly’s HQ, you’d be hard pressed to find an answer that wasn’t Azacca.

A stateside slammer in every sense of the word, this variety has charmed our brew plans ever since our inception back in 2018. Whilst we love it on its own, we feel Azacca really shines when utilised as part of a duo; in the case of Juno, we couldn’t look much further than another variety that has whipped up similar levels of frenzy in our brewhouse – Talus.

The result is a DIPA that is positively Polly’s – dripping with insane levels of tropical fruits kissed with citrus fruits; tangerine, mango and pineapple are the prominent flavour profiles here, backed up with dried roses, citrus rinds and herbal complexity for balance.

Murky orange topped with a lasting just off white head.
Nose is orange pith, grass, ripe melon, dank flicker.
Taste comprises grapefruit, pine needle, mandarin, papaya.
Medium bodied, fine carbonation, light drying close spliced with light juicy come grassy hop bitterness.
Tidy enough DIPA if not quite firing on all cylinders for me.

Can. A light haze on this gold beer, small bubbly pale cream colour head. Light palate, semi dry, good fine minerally carbonation. Thin bodied pale malts, a modest creamy sweetness. Cooling pine. A pretty robust tangy bitterness. Nice hop choice albeit very far from the delivery I would have liked. Tangy bitter lemon, near Schweppes, mixes well with Talus peachy citrus. Light semi dry finish leaves a tangy bitter linger. I mean, Azacca and Talus? Good idea no? Doubly so from a brewery like Polly, but I found the execution below desire. Decent nonetheless

440ml can. Murky golden, white head. Aroma of ripe mango, papaya, herbal. Taste of ripe tropical fruits with strong herbal undertones, mango, papaya, some coconut, grapefruit and piney finish with some bitterness. Medium-full bodied.

440ml can. Pours hazy burnt gold with a large head. Aroma is burnt toast, melon and papaya. Taste is slightly sweet to start with toast, followed by a bitter melon and bubblegum finish.
