Saison with Riesling grapes

A blend of farmhouse ales brewed with Washington Barley and Elwha River Spelt. Refermented on destemmed and crushed Riesling grapes from the Naches Heights Vineyard in Yakima Valley for two months and rested in bottles for six months. Moselle is dry, bright and with notes of lime, apricots and melons

We are intentional about where we get our ingredients from and have been thrilled to work with third-generation farmer Phil Cline of Naches Heights Vineyard on this project. The unique volcanic soils in Naches Heights, combined with the vineyards’ unusually high bestows cool nights upon the grapes, imbuing them with food friendly acidity to balance the ripeness.

Naches Heights Vineyard is adamant about growing their grapes with love and use organic or biodynamic practices and follow guidelines of programs like Salmon Safe and LIVE as often as possible. The Salmon Safe certification ensures the protection of Washington’s valuable watersheds. Their wish is to preserve their vineyards for the next generation and leave the world a better place than it was when they got here.

Pale, slight haze. Not much head. Refined riesling aroma with light brett. Clean, bright, with a juicy riesling character, and a dry finish that reminds of Okanagan rieslings, like Tantulus, that lean drier.

Fair isle nailing the grape funk as always, super drinkable funk, fruity floral notes with slight dry brett notes, hints of juniper.

On tap at Fair Isle, pours a clear blonde with a large white head. Aroma is complex, with rustic saison yeast, wild yeast, and wonderfully musty white wine grape skins. Flavour is complex, with plenty of white wine grape skins, champagne-like effervescence, wild yeast, and rustic saison yeast. High carbonation that accentuates everything beautifully. Excellent.
