Additions of Juniper, Pine tips, and Red Bay leaves provide light citrus and earthy notes with mild tartness.
Seen from above, the earth must indeed seem a strange island.
Seen from below, it’s still pretty strange.
One just doesn’t realize it’s an island until one has been
all the way around.
Hope you enjoy this collaboration with Revelry Brewing Company of Charleston, South Carolina as much as we enjoyed brewing it. Saison with Juniper, Pine, and Red Bay, oh boy! Brewed with heritage grains sourced from both North and South Carolina. Seashore Black Rye, Indigo Blue Corn, Jimmy Red Corn, Farro Wheat and Two and Six Row Barley.
Cheers & Mahalo plenty!

It's a traditional sour with a lovely little kick. I'm pretty thrilled with it.

750 mL bottle from Binny's Lincoln Park. Wanted to crack something special upon hearing about aspidites' passing, and this was it. Spilled some for ya bro. Slightly hazy bright orange large foamy white head, good retention. Aroma of funk, hay, wheat, apricot, lemon. The taste is stone fruit, dandelion, citrus, strawberry, pepper, mild funk and oak. Medium bodied, complex and delicate, lingering tartness. Nice.

Sampled from the tap at Hopcat Madison. Pours a cloudy light dull gold with a white head that dissipates nearly completely. Aroma has a sour lemon note with some juniper and light spice underlying. Flavor is similar with sour light fruits and juniper throughout with some spruce, oak and light grains backing.

750 mL bottle. Pours a hazy golden with a white head. Acetic sourness and funky brett, berry fruitiness. Flavor is medium light, sour acetic, a bit of brett. Touches of biscuit and citrus. It’s alright, but pretty light.

750 ml bottle into tulip glass, bottled on 1/26/2017. Pours lightly hazy medium golden yellow color with a 1-2 finger dense white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of big lightly tart lemon, lime, orange, peach, pear, mango, melon, green apple, guava, berry, white wine, peppercorn, juniper, spruce, pine, hay, straw, grass, oak, herbal tea, wheat, cracker, and rye bread; with light notes of leathery/musty funk, white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, spices, pale/rye malt, and oak barrel notes; with great strength. Taste of big lightly tart lemon, lime, orange, peach, pear, mango, melon, green apple, guava, berry, white wine, peppercorn, juniper, spruce, pine, hay, straw, grass, oak, herbal tea, wheat, cracker, and rye bread; with light notes of leathery/musty funk, white vinegar, and yeast/oak earthiness. Light-moderate yeast/oak spiciness and light lactic tartness on the finish. Lingering notes of tart lemon, lime, orange, peach, pear, mango, melon, green apple, guava, berry, white wine, peppercorn, spruce, pine, hay, straw, grass, oak, herbal tea, wheat, cracker, rye bread, leathery/musty funk, light vinegar, and yeast/oak earthiness on the finish for a while. Great complexity, robustness, and balance of fruity/funky/spicy yeast, spices, pale/rye malt, and oak barrel flavors; with a great malt/tart/spiciness balance; and zero puckering/astringent flavors after the finish. Light-moderate dryness from tart/spiciness, increasing through the glass. Medium carbonation and body; with a very smooth, moderately grainy/sticky, fairly tannic, and lightly acidic balanced mouthfeel that is great. Zero warming alcohol as expected of 5.8%. Overall this is an awesome spiced wild saison! All around great complexity, robustness, and balance of fruity/funky/spicy yeast, spices, pale/rye malt, and oak barrel flavors; very smooth and easy to drink; despite the increasing spicy/tannic/acidic/drying finish. Great classic house JP funk complexity and oak presence. Nice spice balance without going overboard. A really enjoyable offering.
