Ibuki turns 10 this year and to celebrate we’ve blended 2 second fill Sherry Butts of barrel aged, Brettanomyces fermented beer and dosed with zingy yuzu. The traditional Sorachi Ace led dry hop is back, lending a herbal aroma to finish a well rounded complex, funky and fruity IPA.

Clear golden to light amber with a well presented lasting white cap.
Nose is tangy citric sheds, mellow Sorachi pangs, grass, herb, yuzu.
Taste comprises light funky Sorachi bite, hedgerow, grass, herb, mandarin, bitter orange, bretted pangs.
Medium bodied, fine carbonation, semi drying with a tarte climax.
Decent enough for the sub genre.

Near clear gold beer, small pale cream colour head that is refreshingly persistent. Airy palate, mildly dry, decent fine minerally carbonation. Airy pale malts, a thin creamy sweetness. Brett is the dominant flavour whilst not being that intense in itself. Yuzu runs throughout, particularly the mandarin like aspect. Sorachi, its there but, something of an afterthought frankly. Light finish. Frustrating, really liked the few Ibuki I have tried, I mean, Yuzu and Sorachi? Genius! Thought the Brett element would take it somewhere else and, it does but the Sorachi is sadly thin here. Just needs a bit more Sorachi Welly and this would be singing.
